Top 5 Barista Tips

A great cup of coffee is one of life’s little luxuries. Whether you’re brewing coffee professionally or enjoying it at home, having fresh, clean water, high quality freshly roasted beans and a good brew recipe is key to a delicious cup.



Here are our top 5 tips for the perfect cup of espresso from Square Mile Coffee's Anette Moldvaer.

  1. Before dosing your coffee, wipe the portafilter basket and spouts dry and clean. Grind your coffee and use a dose appropriate to your basket or as per your roaster’s recommendation.
  2. Tamp the grounds to achieve a flat, level surface where the water can pass through evenly. The coffee should be like a hockey puck rather than a wedge.
  3. Give the group head a quick on/off flush with water to rinse it and insert the portafilter. Hit your brew button and start a timer.
  4. Place your cup(s) under the spouts; coffee should start to appear after seven to eight seconds. The flow should be steady with a nice texture, and slowly turn from dark brown to a lighter brown.
  5. When you have extracted about 25ml into each cup or 50ml in total, stop the water. The total brew time should be between 25 and 30 seconds.
